Cold Proofing and Bread Flavor
We have developed a unique cold proofing process to enhance
the flavor of our bread through matured fermentation.
Cold proofing is performed in our climate-controlled rooms with lower temperature and humidity than conventional proofing. This extended slow fermentation process allows our dough to develop a deeper, more complex flavor profile over time.

Our method requires precise conditions and significantly more time.
We allow our creations to mature at 42 to 60 degrees with 80% humidity, permitting the yeast to work slowly and develop layered, nuanced flavor. With no conditioners or extenders, we remain committed to traditional methods, baking real bread and allowing time to shape its character.

A Bite of History
The notion of a traditional artisan bakery is a deeply rooted dream of Mariusz Kolodziej. Having been exposed to the fine art of bread making in his father’s bakery in Poland, Kolodziej developed a passion for traditional European methods at a very young age.
His enthusiasm for the trade escalated each year, as did the desire to start a bakery of his own. With a bit of luck and plenty of hard work, the dream became a reality in 1994 on the shore of the Hudson River in New York City. The Hudson Bread Company was founded.
The bakery quickly earned recognition for its distinctive products and dependable service. Through a commitment to slow fermentation, quality ingredients, and traditional methods, Hudson Bread became a trusted supplier to upscale restaurants and hotels throughout New York City. Refusing to sacrifice quality for quantity, Kolodziej ensured that every loaf stayed true to the artisan values that inspired the company from the beginning. He is proud to admit that fulfilling this promise is the secret to his continuing success.
To meet growing demand, Hudson Bread relocated its headquarters to North Bergen, NJ in 2003. Today, the company operates as a leading wholesale bakery service, supplying high-quality baked products to restaurants, hotels, and retailers across New Jersey, Pennsylvania, New York, and beyond.
With the expansion of its fresh & frozen wholesale bread program, Hudson Bread now delivers handcrafted artisan products nationwide—bringing the integrity of sourdough starters, matured fermentation, and traditional European methods to kitchens across the United States.
